Use palm sugar instead of white sugar, if you can't get palm sugar use light brown sugar...
Use limes instead of lemons..

Recipe sounds close..... one of my exes was Thai She could whip up Pad Thai in a few minutes... watching her cook was amazing..it was an innate skill for her.
Lemon Grass is not traditionally included in Pad Thai... but if you like it, go for it..
also needs Tofu, use firm Tofu and marinate it in soy sauce, or better, Golden Mountain sauce for an hour or so before dicing and stir frying..
