Here's an idea of what your "cleaned up" 3.0 might look like. I haven't removed all the heater stuff yet and I have MSD rather than electromotive. BTW those carbs are reworked 40mm Zenith's with 36mm venturis, you're going to love the throttle reponse if you set those weber's up right!
