How often do you sharpen your knives as opposed to just honing them? I have had a set of knives for 10 years that I just take to the steel before I use them. Am I missing something? Perhaps I should see if they can cut paper or something.
According to what I can find on the web, they should be sharpened at least once per year. Seems like the AccuSharp might fit the bill perfectly for that.
