Silver is a very nice color, as long as the car doesn't see a lot of "sun exposure" time. As you said- it had been painted nicely before, but it went away. Without meaning to offend others with silver paint jobs; unless the finish is in terrific condition and detail, it is a harder color to sell when the time comes. (not as bad as Brown though!)
10 years ago we had two exquisitely detailed turbos- one red and one silver. The silver one had better mechanical details- cams, intercooler, etc. The red one had 4 buyers outbidding each other the first time we put it up for sale, the silver took 5 months to find a buyer!
Of course silver has come around again as a popular color (just look at all the benz and bmw around)
Go for the orange- it's period, it's unique, and as a 911T with non original motor/ trans, the value is certainly not hurt because of lack of originality
