BYU is in Provo not in SLC. University of Utah is in SLC, and has a population of drinkers I'm sure.
My only suggestion for opening a bar is offer free peanuts and let everyone chuck the shells on the floor. I always feel at home when I can throw stuff on the floor and not worry about it
