There are many possible reasons for your problem (clutch cable/linkage/pedal issues, engine install related issues, etc.), but the most common cause of clutch chatter, on an otherwise sound car (mechanically), is oil contamination on the clutch. It is possible that the main shaft seal, at the throw out bearing guide tube, has leaked transmission fluid onto the clutch disc. Of course, this is just a guess because you have not supplied many "parts" to the puzzle...
1. How many miles on the clutch?
2. Is the clutch cable the 1975 style with the 90 degree bend at the trans, or...
3. I the diff end of the cable straight?
4. How many miles on the clutch cable?
5. If the cable's been replaced, does the bowden tube go over, or under, the throttle bell crank lever on the side of the trans?
Etc., etc., etc...
