Dave's been busy the last week keeping the awesome food flowing across the bbq...
Tried a couple new things in seasoning methods and meat types:
Garlic Gourmet Jerk Seasoned Rub Pork Tenderloin, Quick sear then low and slow keeps it medium rare and melt in your mouth moist inside. Cut the Long Loin into 3-4" pieces to make cooking more uniform.
Jumbo Scallops:
Sometimes I soak these in common milk or buttermilk for an hour - imparts a slight milky body of flavor to them, then dust them with a spice rub of choice, sometimes I wrap them in bacon, then bbq ..........this time, no milk soak, and no seasoning on the scallops themselves, but made up a spiced herb butter in the mini-processor with garlic, italian spice, bit of southern dust heat, blended it smooth, then quickly carmalized saute'd mushrooms and onions in a cast iron pan and then added the Scallops for a quick sear maybe 2 minutes a side.
Lamb T-bone Steaks:
The BEST dish, no knifes or forks needed was some baby small lamb T-bone steaks. These were less than 3-4 inches across each. Call it a 3-4 bite finger food. The Tenderloin Filet side just melted in your mouth butter smooth tender that you didn't even want to chew or swallow it, it just sorta melted in your mouth. The Top loin bigger cut side of the bone was still ever so yummy tender. Lamb is a great cut of meat if you haven't tried it, These lamb T-bones were a first for me, normally we get a boneless leg ham cut. Only T-bones from now on!
did two type of rub on them, one a Greek Style Rosemary herb base, and one a darker garlic sweeter brown sugar rub.
I ate 4, the wife got 3, perfect meal in many ways! Just a quick hot sear leaving some nice cross-hatching marks on the meat and they awesome. You try lamb chops if you haven't before.......
YUMMY STUFF, Life is too short for cheap cuts of meat...........really, this stuff isn't mind blowing expensive, Pork Tenderloin $3.99 a pound, Scallops $8.99 a pound for the 10 counts/lb, Lamb T-bones $4.99 a pound.
