The mere fact that you say that and understand yourself shows some maturity in itself. Now tell granny that you will sell one car and keep one car for spare parts and that it will be cheaper in the long run. You won't be far from wrong.

I still think you should pour over one of those cars, even if it is to just thoroughly clean it up, so that you know more about the cars in general. I hope to shout that there is a lot of junk out there for sale, even here in SoCal. Don't let a higher then average price influence you into believing that the car you may be looking at is solid. Some sellers don't know dick about thier cars, and, well some do. Those can be the scary ones.

Look, I've been around cars since my first car, a '57 Corvette in 1963. And the 914 I bought had more rust than I could have imagined, even after inspection. Most of it is concealed. They rust from the inside out. Not unusal for many cars. Learn, learn and then learn some more about these cars before spending $6000. I promise you that these are not as simple as VWs.
