Ya, oil temp has its own temp bypass by the filter before the cooler lines and is availible from places like here and 944Online. Water temp problems could be a simple matter of bleeding the system at the fitting on the engine neck to radiator...highest point. Can take 15 to 30 minutes while running with a clear hose back to the tank to recirculate ... because the bubbles are small. Theres a post ... somewhere ... to show you how to build one. Gauges in these cars are not very accurate so double check with a known good thermometer before you get excited.
