Pretty broad question you are asking..... Essentially when working on aircraft one must do the work in according with FAA approved documentation. Basically the most important thing for me is using checklists to perform inspections and to closely follow approved manuals/data when performing maintenance/repairs. I am sure some larger shops have their own "rules" for how they organize spare parts and store tools, but that kind of stuff is not regulated by the FAA.
