I have been a vegetarian for @ 40 yrs now. Beans & grains combined provide a protein balance equal to meat. My favorite trick for tofu is to buy the freshest, firmest tofu you can find, then freeze it. After you thaw it, press the water out of it then a) marinate it before cooking in the flavors of your choice b) fry it in a hot hot oil that you've flavored w/ say ginger & garlic, you get the idea.
The freezing changes the texture to something more chewy, w/a mouth-feel closer to meat & it absorbs other seasonings better. I personally cannot eat tofu that's not been previously frozen.
Quorn makes a good turkey roast. Morningstar Farms has a wonderful line of meat analogs found in the freezer section of most all major grocery stores (think not-burgers & not-sausage)
As far as staying physically fit, I rode TB racehorses most of my life, that takes lots of strength & stamina. I don't slouch. I do yoga, ride in 3-day events, hike, camp belly-dance & garden. My friends get tired watching me & just stare in amazement & smile. When my MD does bloodwork & my annual physical, he just says he wishes he had my #"s.
