When I was running 15" wheels on the street, I used 205/60-15 tires. No fitment issues.

Some like 195/60-15 tires to give it more of a vintage look.

I also at one point ran 205/55-15 which were ok but my Speedo read really low and I did not like that.

I use the same size all round to make rotating easier.

For Ultra High Perfomance Tires: Tire Rack shows the following summer tires in 205/60-15: BFGoodrich g-Force Sport and Yokohama AVS ES100. If you are looking for an All Season Performance Tire, they show: Bridgestone Potenza RE960AS Pole Position and Kumho Ecsta ASX. Any of these would would do you fine.
