Sounds like you're doing great. The first couple of weeks of critter adoption can be, ah, er, ...trying, until they figure out the ground rules.
As for chickens.. After we adopted our first dog, we moved from an apartment to a small house in a rural area. The neighbor two doors over had chickens which used to roam the back yards. One day when we returned from a walk, PJ ran around the house out of sight. When I got around the corner, he had a chicken under one paw and was pulling out tail feathers! About a half-dozen others were calmly standing around, apparently waiting their turn.
I scolded the dog and reached to grab the bird carcass when it jumped up and ran off, minus its tail feathers. One bald-arsed bird. They seemed to stay closer to home after that.
