Since your seats are likely in need of work, it might make sense to just replace them. I have a friend here in LA (not active on this forum) who has a pair of '72 seats for sale with fabric center sections. Could be good for AZ driving. At $350, much cheaper than dealing with your existing seats, and you can sell of the old seat cores for $150-200. In many cases, you'll find removing and replacing components of the car make financial sense.
OTOH, you could go over the top with aftermarket seats. I put these in my '72 coupe.
You can get them in tan with houndstooth centers. In these early cars, the interior color was confined to seats and side panels, so changing colors is trivial. Tan works very well with Viper.
