I have this problem with every GM V8 conversion I've done, which is quite a few at this point. You need a VSS to stop this. Do you have your check engine light hooked up? If not you should, and it should be off.
These guys make some conversion VSS sensors that work very well.
V-8 Vehicle Speed Sensors (VSS), Speedometers, V8 Conversions, Stealth Conversions
