chicken bacon wraps.
cut some chicken breast into 1" cubes and then wrap a 1/2 piece of low fat bacon around it using a toothpic to hold it together. in a plastic container mix up a 3:1 ratio of brown sugar (3) and chili powder (1). if you like spicy you can add come cayenne to it. thoroughly coat each piece and let it rest for a few minutes. while it is resting i usually line a baking tray with aluminum foil, then put a cookie cooling rack (mesh) over that (easier cleanup). place the pieces on the rack and back at 375 for 20-30 mins or until the chicken is fully cooked.
