I was searching for a recipe and I like fruit cake, so I thought I'd resurrect this thread.
Christmas time will be round the corner and I'm planning on my once-a-year time as the family baker. Fruitcake is the annual goal here, made months in advance and soaked in copious amounts of Myers Extra Dark Rum. I use at least an entire bottle of rum during the aging process and I use cheese cloth to wrap it.
Each year I mess with the recipe and it seems like I still haven't found the perfect fruit cake. I have issues with some of the candied fruit ingredients, some of them smell like formaldehyde. I like some nuts, but mostly rum rehydrated fruits like; cherries, prunes, raisins, sultanas, currants, dates, figs, lingon and cranberries.
So I'm looking for a heavy medium to dark recipe. Can anyone help out? Any famous recipes out there?
The final product goes to parties and neighbors. A great deal of time and expense goes into these little cakes, so I'm glad no one has complained yet.
