We've shipped a couple of non-runners.
Important points:
1. Steering is operational, car rolls easy (give a weight - it helps as they're light).
2. Service and PARKING brake work. Often two guys will work together and one can sit in the car, the other can winch/push. Doors closed, steps on the brake to stop the car. If by themselves, they can grab the parking brake.
Make sure you secure any wiring and hoses so they can't drag/catch on stuff. Seal up the fuel system (e.g. cap/duct tape over fuel line openings in engine bay). Obviously to avoid leaks, but also to avoid fumes.
