Go for it. As I was reading this I thought the same thing, mount the turbo low as you can to keep the CoG low. Depends on which VR6 you use (Toureg unit would be ideal) it probably would pull really hard off the line with all that torque vs. the flat-6 but wouldn't run as hard on the top end unless you had a really big turbo. Would be interesting though.
All that you'd have to worry about would be the height of the VR6, should fit though.
