Without a 3G signal or wifi signal the GPS is usless. It will show you as a blue dot on a blank page. It has to be able to download the map real time. You can use it to make a route to some location, but it will have no way to display that map once you are out of wifi signal.

My dad gave me his old original iPhone. I played with it just like you are doing. I kept finding neat things it could do. I drank the kool-aid. I carry an iPhone 4 - 32 gig with unlimited data plan now.
My wife has a 16 gig version, and an iPad and we have a Apple TV.
