The first time the knife is sharpened it may take hours to do correctly, but once its done, if done correctly, it will last a long time and only take a bit of work on a good stone to keep up to snuff.

Most people do not know how to sharpen a knife correctly these days. I am very lucky that I was taught by old timers.
