That said, it seems to me most of the really, really nice 914s still sell best by word of mouth. Check you local regions. I found a beautiful '76 2.0 a few years back in NJ, mostly by word of mouth. imho, finding a nice northeast car carries a small price premium due to scarcity. That premium may or may not be the value of transporting a nice car in from somewhere far away.
Sounds like you are chasing a memory, and that can be hard to achieve. if its been years since you've had a 914, you might try finding some local "less nice" ones to remind you of the how they actually drive.
I too would like to find a car like the one you describe, but considering the 914 price points for the last 20 years, abuse, neglect, time, have all played harsh roles in their condition.
If you are open to a 6 conversion, then also consider a big bore 4 imho. It doesn't seem like you are requiring complete originality, just truly rust and "issue" free.
You might even consider a 1.7 if one comes along.. and maybe find your own 2.0 to drop in if you think the extra 15hp matters... which it might not if just being used for sunday morning coffee runs.
