Remember that Florida isn't just Disney and beaches. If you can, think about driving up here to N Florida (2-3hrs from Disney) and check out the springs, etc. Silver Springs is in Ocala, and definately worth a day trip up.
If you are into aquariums, the Florida Aquarium in Tampa is great, and has a great outdoors play area for kids.
