This is the way I lke them.
But if you Google you will find others.
Scallop Potatoes.
4 large potatoes of the mashing/baking family
4 spoons of crushed garlic (more if you like)
1 large onion diced (I use spring onions, whatever you like)
600ml of cream
1 knob of butter
spoon full of parsley chopped fine
Cheese.
Peel the potatoes and steam or boil till half cooked. 20 to 25 mins
Put chopped onion and garlic in a bowl. Add a bit of the cream and mix.
You will use this mix between the potatoe layers.
Get the potatoes out of water or steamer.
Let them cool so you can work with them.
Start slicing the potatoes and laying them flat in the baking dish.
Cover the base one slice thick.
Add a thin layer or blobs of the onion garlic cream mix over the potatoe layer.
Then another layer of potatoes and repeat 4 or 5 layers.
Finsh off by adding the rest of the cream on top.
Shake the dish around so the cream fills all the gaps.
Bit of cheese, if you like on top.
Into a 200deg oven for 30 to 40 mins. Top with cheese should be golden brown.
