The definitive part of your thinking is to find a shop that really is competent.
Taking the engine to just any old dyno facility would be just a waste of money.
A dyno can be used to quickly dial in the A/R ratios and set the rev limiters so that when instlled you would be very close to ...if not spot on..for all adjustments.
Good thinking as far as I am concerned.
