A major reason the valve seats on the old VW's were three angle cuts is because of burning the valves.
The exhaust on the engine would get so hot that you had to keep the seat as thin as practical to avoid massive heat transfer. Eventually VW went to sodium filled exhaust valves to try to keep temps with in reason.
I remember doing a valve job a day during one hot inland southern California summer many years ago. Also a lot of head stud coils.
