Improvised dinner tonight. Cubed tilapia, marinated in olive oil, lime juice and salt, then sauteed briefly (not a necessary step). Served on wilted spinach and snow peas, with minced red onion, garlic, and cilantro slightly cooked in white wine and lime juice, raw tomatoes, lime zest, salt, pepper, paprika. Yeah, it looks a little like throw-up, needed more bright green color. Tasted sort of zingy and fresh, next time I'll spike it with tequila.
