I've been working on an EFI 5.0 install and I can tell you you'll need a pretty short distributor to clear the hood. I'm going with DIS so I can run the throttle body out the front like on an LSx and will be running a box upper intake. I can't see how a carb would fit under the stock hood, either.
The torque tube adapter is pretty simple if you use a bell housing out of a '70 Mustang with a C4 and a slave cylinder from a 2011 Mustang GT500.
You won't find a kit for it anywhere because the LSx is so popular. Most people would argue the LSx is the tool for the job, but I figure it's my car and my money so I'll install the engine I want to use.
