For my 84 which has the non-turbo standard fender flarings (same body style as your 87) I have 9x16 rims in the back. It is lowered, and I could not tolerate anything larger than 245/45. And that is with some rolling of the fenders.
Most SC/Carrera can tolerate up to a 275 even 285 if perfect wheel o/s is used and some work is done, it's not easy but it can be done.

245/45 on a 9x16ET15 wheel should be an easy fit w/o an extra work and w/ plenty of clearance at any ride height.

I used to run 275/40 on 9.5 on my '76 C3, but have gone back to 255/40 x17 on the same 9.5's for street use, this is also an easy fit w/ SC/Carrera flares and the correct wheel o/s
