How do you use the car? but you seem very worried about rpms at 60mph. Is this a street car? track car? AX car?
225's all around would be fine. Not sure larger than a 275 would fit on an 8" rim though.
You will have many more tire choices in the 17-18" diameters. Even 16's are somewhat limited in selections.
