You don't need the center console with the 3 position fan switch if you don't intend to keep an auxiliary fan in the engine compartment, or install footwell blowers in your car.
You don't need to change the entire handbrake assembly, just the parts associated with the levers. A little time studying the Porsche parts fiche will pay off here. It may be cheaper to buy a used handbrake assembly, though. You will have to change the cable that's in your car to the dual cables needed for the older system.
