As far as a commercial stove the lack the insulation that a residential stove has and I was told that they aren't to code for home use.

I'm reading up on ranges too, good timing. Looking for a 36-48" range to run on propane. The Wolf R486G looks great w/ 2 ovens, but $$$. Ouch. Curious on burner configuration. I'm thinking 6 burners with a griddle. Never had a build in griddle before, PITA to clean? Useful?

Seems no matter what brand I read about there horror stories and diehard fans. Sure would like to save some $$ though.

Mine is a 6 burner and griddle. I'm not using the griddle all that much and yes it's hard to clean. I'm nervous about liguids or eggs running down into the seams.

For cleaning the ciiking surface I've found VODKA works the best.
Jim what are looking for? Maybe I can help if you are interested stoves that may have damages like scratches in the back of side of the unit from the factory or delivery. Sometime I am able to save people up to 2k on a unit. Depends on what you are looking for.
