Are you sure you tightened the fan belt properly? If it's reaching 250 that quick it might not be getting enough cooling air because of a slipping fan belt. A new belt might need to be set at a different number of shims in front off/behind the pulley half. You should have the same total number of shims though as with the old belt.

Ignigion problems could also cause high heat, poor performance. Chuck.H has some good advice above for ignition checks.
