5k mile change intervals for a car which has a 10qt sump and runs Mobil 1 is significant overkill. Pull an oil sample and send it to Blackstone if you are worried about contaminants, low TBNs, etc etc.
I don't know how your drove your air-cooled Porsche but for me 5,000 miles would have been 50% in the 2-3k RPM range, 50% in the 4-6k RPM range. You bet I'm changing it every 5k with the best I can get. SWEPCO or Brad Penn, with regular topping-off every month.

These cars aren't your grandmother's Chrysler.
