I'd definitely recommend the gopro with a suction cup mount. One cool position that I like is mounted to the targa glass behind/between the seats looking forward.
If you are looking for something to record all the time, you'd want to get an extra battery, and extra memory cards. There might also be some way to use the gopro skeleton body and output the video to another memory, and also have it constantly charging so you don't have to worry about recharging all the time.
