Olivia Newton John had so many surgeries in her face that lately she looks like a doll from Madame Tussauds. She also has Jewish ancestry (so not your typical anglo saxon) Although she looked older than 58, she still looked better without the latest plastic surgeries in this picture...
Helen Mirren is an attractive 67 year old but doesn't look younger than her age. Her real name is Ilyena Vasilievna Mironov. British? Go figure. Good genes matter... She also had a lot of work done in her face.
Elizabeth Hurley looks old despite having gone through plastic surgery and botox. Her wrinkles and hollows in her face give away her age. She is attractive, but she had plastic surgery to change her natural features in the past, which is why she looks good.

In any case your average British women don't go under the knife as the celebrities you mentioned above.
If you really want to see how real British women age, you need to go to London and meet people from there. (I travel on business to the UK all the time and know how my work colleagues look in comparison to my colleagues from the US and Canada). A great majority of British girls (no offense) are obese and not very attractive. While in London the only gorgeous women I have seen come from either Eastern Europe (Russia, Ukraine) or South America (Brazil?)
Perhaps your wife's case is a rare exception, then again we all like to think of our wives as Goddesses... Beauty is in the eye of the beholder....
BTW I come from Montreal where women are naturally beautiful so I know a lot about this topic
