3 hour low and slow indirect heat smoke over Alder/Hickory/Maple wood chips.

Common Italian Spice Rub, then a heavy heavy rub of Brown Sugar, then inject it with ~4 shots of Whiskey, heavy fresh ground pepper-corn rub to finish.




Did I mention it was butter knife tender?
