I eat A LOT of apples. Most days that I work I eat 1-3 apples. I find that if the apple is split up around the stem that it often tastes bad throughout. I'll eat around an apple with a bad bruise, and I've also gotten apples where on the second bite I see that the center it starting to turn a color, but the apple still tastes fine. I'll eat around bad spots if the apple tastes ok.

If I had cut into an apple that looked like yours, I'd have thrown it out because it looks horrible. Maybe I'm lucky that i don't cut them to eat them. It's possible that I've eaten several that would have looked like that if I cut them.

Hmm, I wouldn't have any idea of the apple would taste different straight from the tree.

I suspect it's partially in your imagination. They've been keeping some fruits and vegetables long term for a LOOOONG time. My uncle was in the fruit business all of his life. He started with his dad taking him to work when he was <10 during the summer when school was out. He's 78 now. For a long time, he worked as a govt fruit inspector. He's told me some fascinating stories.
