That looks like a pretty sweet car.
Depending on how the seats are mounted, you might be able to adjust them up after getting home. If not, try researching adjustable side-mount brackets that will enable you to raise the seat and change its angle to make it more comfortable for longer drives.
Alternatively, consider finding a pair of factory sport seats and swapping the race seats out. Although heavier, they're very good at holding you in and provide easy entry/exit.
