Quite a change from NC to Paso Robles, CA. I had family that lived there for many years & have a sister who lives in Atasccadero (means pig wallow in Spanish) 10 miles south of there. It's right at 27 miles from north of San Luis Obispo a really charming town with a university campus. All the towns are small, including SLO, but the area is awsomely beautiful if you like small town, rural type areas - open, rolling hill area with tons of oaks. I would have loved to live there myself. I believe you studied gun smithing, or something like that & I don't know anything about employment or business in that area for that type of work. My sister owns a property management company in the area. If you might need some help from her if you do move there, let me know. She's been there for close to 50 years & knows a lot of people and a lot about the area.
