So long as you run fat hoses to big coolers, there should be no problem with a pressure drop. I run I believe it is 5/8 inch hoses, and an Empi 96 plate cooler with full flow filter. i have the bigger oil pump (30 mm gears) but even with a stock pump you should be ok.
for the multiple oil coolers, you should run them in parallel not in series, this will result in less pressure drop. In series the pressure drop will be more than in parallel.
