Determine how many HDMI inputs are on the TV.
The Composite (black RCA) are from the Sony Blu-Ray player, that should go HDMI straight into the back of the TV.
Swap signals from DVR/Blu Ray using the input feature on TV's remote.
If you have a second HDMI input on the TV then you can hook the DVR up using it but really the Composite (RGB) are perfectly fine. Whether you use Composite or HDMI to connect the devices really has more to do with the individual devices. Sometimes HDMI looks better, sometimes Composite.
Don't overpay for HDMI cables, $5 cables work just as well as $50 cables.
