I'll take a stab...
I'm sure you know this, but to get max value, you need to put that car back to original condition (yes, even MFI). One reason nice correct early cars are so valuable is that it is rare to find a nice example inside & out with all the correct bits. The guys with deep pockets that have run the prices up on these early cars like this kind of stuff!
Your car (the E) has become quite collectible in the past few years. If you could include most of the original bits (engine case, MFI, some interior bits, etc.) it would add quite a bit of value to most people.
I erringly passed on a nice driver '71 911E coupe three years ago for around $22k - bad mistake (that car has probably doubled in price). During the next economic bust, I hope to have some cash to snap up a similar deal!
I checked the NADA vintage guide and it put an average car ('73 911E) at $28k and top retail at $40k. With most of the original parts included I'd say your car is in the $30k to $35k range (low end with no original bits included with sale). If it was all stock in good (but not great) condition, maybe $50k (I think the NADA guide has not kept up here). A mint show car, who knows ($75k+??)
If it was originally a "signal" color (viper/conda green comes to mind) you could probably add $5k+. It looks like a great driver for somebody, I hope it finds a nice home...
