I like charcoal because you can create an even bed of heat or move the hot coals around as needed. Even with flavor bars or lava, heat from the gas is hottest near the burners and there isn't anything you can do about it. But as someone said, cooking with charcoal is a ritual and it's usually not worthwhile for me. I use gas almost exclusively anymore. My favorite ritual is making a martini. You can't take shortcuts with that.
