When I bought a mini14 they only came in wood... I replaced with a fixed synthetic stock from Choate... good stuff.
High cap mags are expensive and other than factory ones I'm not sure what works in them... of course, since you are in Cali, that is a fairly moot point.
Instead of the mini-30 I'd get a Yugo SKS and make it Cali compliant (remove GL and bayo). Cheaper, better, quick reloading with stripper clips.
I'd also look at the Saiga offerings...
