Not sure what it would feel like going from a nice 2.2 911S to an old Corvair? Maybe like switching from young Cindy Crawford to one of the stumpier Kardashians? IDK...
The truth of the matter is that only a fast 911 is going to suffice, it won't be as cool as a 1970 911S but it might have other attributes that the old one was lacking. You hinted that you sold the old S for somewhere in the $30s? Do you still have that $$? You could buy a nice 993 for that, maybe have to add a couple bucks...I'd stay away from the 944s/Miatas/Mustangs/etc., you'll just have a sick feeling every time you look at it. In a clean 993, you could just pretend that you traded the old S in back in the late '90s when the 993 was worth 8x as much!
