Folks I have met with this attitude are either raging vegans, hopeless hypocrites that are too far in denial to face the fact that animals die to feed them everyday, or just too cowardly and disrespectful of the animals they do eat to look them in the eye and kill them. Or some rather unpalatable combination of the three.
