Great to have her with us - we make food accommodations - but wow am I proof that one can grow from picky to foodie. In college I was just as I was raised. Finally get dates built around food and suddenly sushi, oysters and even (blargh) kale are somehow palatable.
I blame girls on diet-grown-up-ed-ness. If not for them I'd be eating Totinos pizza and Spaghettios...

My dad was a picky eater...until he was in his 60s. I suspect it had to do with boredom. Eat the same thing for so long, you crave something different I suppose. We took him to a hardcore dim sum meal..and he ate some things well out of his comfort zone. He did say he likely wouldn't eat most of them again...but he was glad to try them and was surprised about the taste. Once we told him it's not just about taste, but also texture, mouthfeel, etc...he seemed to "get it". He's been pretty adventurous with his eating since.
You don't have to like everything you eat. Just TRY something different.
