I raced 600 supersport in AMRRA & GPPRO (NE region) for 7 years and am a better auto racer for it for sure. Seeing that video brought back a lot of memories. Best times but also times better left in my youth. I can't imagine getting back up after some of my lowsides now and I was lucky enough never to break anything, just bumps and bruises. Usually when you go off on the track, you're walking away with a broken collarbone, that ones weak & breaks a lot.
As far as non-celebratory wheelies on track, they were just incidental to acceleration and you tried to keep the front down for control & acceleration. Once the front wheel leaves the ground, you cannot accelerate any harder (the whole bike will just pivot on the rear axle causing a bigger wheelie). The really fast guys always had their front ends down.
