You wake up in the middle of the night, and you're hungry. Your stomach is growling so loud that it keeps you awake. You can't make it until breakfast. You get out of bed to make yourself a midnight snack at 2:00 in the morning.
You could make a Dagwood Sandwich... raid the refrigerator, and make a huge sandwich piled high with everything. That's always a good choice. But last night I made something for the first time -- a cheese quesadilla -- and suddenly I have a new favorite midnight snack!
It's a tortilla with melted cheese on top. It's easy and it's yummy.
Frying pan + spray canola oil + tortilla + cheese.
Of course my girlfriend woke up, and I had to make one for her, too. This could become a nightly ritual...
